Ok, I met with the folks from Sony's awesome Rolly team at CES today!
Here's how to get your Rolly to play music via Bluetooth and dance to it! And yes, an English Motion Editor is coming, but for now you can use this awesome feature!
First, set up your system:
In Windows Vista on a Bluetooth-enabled PC:

Put your Rolly into Bluetooth mode.

Hold the center button down for 10 seconds, or until the button's lights start flashing quickly.

Open up the Bluetooth Control Panel in Vista.

Click the "Add..." button to add a device.

In the list of devices, select the SEP BT-10, which is the Rolly's model number.

In the passkey options, select to enter your own key, and enter "0000", without the quotes.

Windows will configure the Rolly as "Personal Headphones".

You're ready to go!
In Mac OS X (I'm doing this one from memory, so my apologies if I'm missing a step):

Open the Bluetooth menu and select "Add a device..."

Select the SEP BT-10 from the list of devices.

Set the passkey options to the "like a mouse" option.

You're done.
Now, to play music using the Rolly:

Put the Rolly in Bluetooth mode. Both Windows and Mac OS should automatically recognize it and start using it.

If the Mac doesn't start using it automatically, select the SEP BT-10 from the Bluetooth menu in the menu bar and select "Use Personal Headphones"
To Make the Rolly Dance to the Music:

Start playing the music and simply double-tap the top button, just like regular music-playing mode.
